This is a Japanese inspired way of cooking Aubergines. It’s really delicious and goes well with a stir fry and is also a nice side with Fish.

2                       Aubergines
2 tbsp               Miso Paste
3 tsp                 Honey
1 tsp                 Sesame Oil
1 tbsp               Sesame seeds
3 tbsp               Water

Pre heat your oven to 180C. Cut the Aubergines in half length ways and cut the flesh in a criss-cross fashion. Place on a baking tray flesh side up.

Mix the Miso, Honey, Sesame oil and water together in a bowl so it is all combined nicely. Spoon this over the flesh of the Aubergine making sure it gets into all the incisions. Sprinkle the Sesame seeds over the top.

Place in the oven and bake for around 25-30mins until the Aubergine is soft and has  absorbed all the flavours from the paste.
