Kale Pasta:

100g pasta per person

1 onion

2 cloves garlic

1/2 red pepper or 1/2 broccoli head

1 bag kale (roughly 300g)

Whilst your pasta is cooking fry some onion and garlic, finely chopped. Add a red pepper if you have one and boil or steam some broccoli. Roughly chop your kale and add it to the pan with the onion and garlic. Don’t be scared to use lots as it wilts quickly. Whilst this is all happening, finely chop some parsley. Once the pasta has cooked mix everything together in a large pan or bowl adding glugs of olive oil, lemon juice, salt and pepper. Serve immediately with some grated cheese if you fancy. If you don’t have all the ingredients it will still be lovely. You could also mix in roasted veg such as fennel and celeriac.
