Kohlrabi is an uncommon but versatile vegetable that looks a bit like it's from out of space! There are green and purple skinned varieties, but the flesh is white. It is a member of the cabbage family, with a crisp texture and nutty, sweet flavour. You can roast, sauté, or simply peel and cut into slices and steam, then serve with a dab of butter and top with snipped herbs. It is also excellent raw, grated into a coldslaw or used as crudité with your favourite dip.
