A couple of years ago we were introduced to the seedless variety of the Fuyu Persimmon, also known as kaki fruit. A native to Japan, Persimmons were introduced to Mediterranean climates all over the world and we source ours from growers in Spain. It is a sweet fruit with a rich flavour and can be eaten, skin and all. We think it’s delicious with an unusual flavour and good texture – we hope you agree. Their texture varies from crisp and succulent when young and perfectly ripe to more tender as they mature. Store in the fridge.
They can be eaten fresh out of hand, added to salads, used as a topping on tarts or accompanied by ice cream or soft and fresh cheeses such as burrata, mozzarella and mascarpone. In salads they are complimented by pecans, pistachios, bacon, proscuitto, figs, mild lettuces and bitter greens and herbs like basil and mint. They are delicious dressed with citrus juices, balsamic vinegar and nut oils such as hazelnut and walnut.
