Pullet Eggs

Pullet eggs are the very first eggs that young hens lay at around eighteen weeks old. 
Sadly, because they’re smaller and don’t conform to supermarkets’ standard size, millions are thrown away every year despite the fact they have a higher ratio of yolk to white. Not only is this a huge shame in terms of food waste, but because they’re even richer and more delicious than the usual kind!

Available for only brief periods, we love being able to offer this seasonal delicacy to our customers, whilst combatting the alarming fact that one third of the world’s food is discarded. 
You can use pullet eggs however you like, allowing for the reduced weight in recipes. They are, however, very well suited to poaching thanks to their brilliant ability to hold together.
