January King Cabbage

January King cabbages have vibrant patches of purple and boast both the density of the white cabbage and the ruffles and ruches of the Savoy. The result is that they’re suitable for any cabbage recipe, from roasted hunks to raw in slaw. How about trying it in fritters? Either adding to a latke or Japanese style as okonomiyaki?
