About our Vlita Amaranth Green Giant

Amaranth Green Giant or 'Vlita' (in Greek)

Harry met George in the village, they are also a keen grower. George introduced Harry to 'vlita' - a common leafy green in Greece (widely eaten like spinach). More commonly referred to here as Green Amaranth.

This delicious green can be used as a spinach alternative and is really rich in vitamins.

George's Vlita:

Bring a pan of water to the boil
Chop up all the amaranth Greens (including the stalks, stems, seed heads, the lot!)
Add to boiling water, simmer for 2 mins
Drain
Add a good glug of olive oil
A good pinch of sea salt
A good squeeze of a lemon
Toss together... and enjoy!
