Romanesco Cauliflower

Also known as Romanesco broccoli and not to be confused with the Spanish sauce ‘romesco’ (which is made from almonds, tomatoes and peppers) these are the craziest looking of the cruciferous vegetables.  

Not only are their seemingly mathematically arranged florets as mesmerising as a kaleidoscope, but they have their own delicate flavour, and work anywhere where either cauliflower or broccoli are called for. It would be a shame though, not to showcase their architectural formations, and rather than blitz, blend or blanket over, allow their spiralling spikes to maximise flavour and texture; as the shape provides both pockets to harbour dressing and jagged peaks to turn perfectly crisp!
