

Slice them up, dip in some seasoned flour, then beaten egg and finish with breadcrumbs. Fry in Honest Toil until crisp and golden.
Halve any big ones but otherwise throw into a roasting tray, scatter with sugar, a splash of balsamic, some Honest Toil and sea salt. Roast them in the oven, low and slow, for an hour or so until they’ve collapsed. Spoon into a sterilised jar and top with Honest Toil to seal. They’ll store for weeks in the fridge. Add them to sandwiches, eggs, salads or on top of a wedge of cheese!
Quarter and toss your green toms in olive oil and sauté with some minced garlic for a few minutes. Pour in whisked eggs, add some sliced cooked salad potatoes and crumble over goats cheese. Cook on the hob for a few minutes then finish off under a medium grill until golden brown and melty.
Take a handful of tomatoes and half an apple, core and seeds removed, and blitz in a blender until smooth. Add some Tabasco, a grind of black pepper and Worcestershire Sauce and a squeeze of lime and stir well. Fill a glass with ice, add your vodka and top up with the juice. Garnish with a stick of celery and a wedge of lime.
