This is a fantastic seasonal weekend brunch dish! Boxty’s are an Irish classic, in essence a potato pancake using both mashed and grated potato for a nice crisp texture. This recipe combines the pancakes with sautéed leeks, fried eggs and some crumbled feta for that salty kick.

Ingredients

 
200g leftover mashed potato
2 medium sized potatoes
200g flour
350ml milk
Salt
1 leek (finely sliced)
Butter or olive oil
2 eggs
Feta

Method


Step 1.
 
Grate the potatoes into a cloth and ring out all the moisture. To a mixing bowl add the mash potato, grated potato, flour and a good pinch of salt. Add the milk and whisk into a batter consistency. Set aside for at least 30 mins.
 
Step 2.
 
Sautee the leeks slowly in a little butter or olive oil, add a pinch of salt. Cook until soft and set aside.
 
Step 3.
 
Heat a non stick frying pan or skillet over a low heat. Once the pans hot, add a little oil. Add a ladle of boxty mixture to the pan per a pancake. Cook for 2-3 mins on each side until brown and crispy. Repeat the process until the mixture is used adding a little oil to pan if needs be. Set the pancakes aside and keep warm.
 
Step 4.
 
Fry your eggs in a little oil and season with salt and pepper, cooking until crisp on the bottom and still slightly soft on top.
 
Step 5.
 
Add to the plate a boxty pancake, scatter over some leeks, add your fried eggs and crumble over some feta on top. Enjoy!
