Great recipe for warming yourself up over the wet winter period. Squash from our farm makes a great basis for this spicy stew with the addition of dumplings is a great big vegetarian hug!

Ingredients


1 Onion (Finely diced)
1 Carrot (Finely diced)
1 stick Celery (Finely diced)
2 Cloves Garlic (Crushed and chopped)
Olive Oil
500g Winter Squash (Peeled and cut into 1 inch cubes)
2 tbsp Tomato Puree
1 tsp Dried Oregano
Half tsp Cayenne Pepper
1 tsp Cumin seeds
1 tsp Ground Cumin
1 Cinnamon Stick
2 tsp Smoked Paprika
1 tbsp Marmite
1 Tin Butter Beans
1 Tin Tomatoes

For the Dumplings

250g Plain Flour
2 tsp Baking Powder
125g Unsalted Butter
Pinch of salt
2 tbsp Pickled Jalapenos
50g Mature Cheddar
2 tbsp Milk

Method


Step 1.

Pre heat your oven to 180c. Get a heavy casserole pan that has a lid and place on the stove over a medium heat. Add a glug of olive oil, then the diced vegetables and garlic. Add a pinch of salt then sweat off for around 5 mins until softened. Add the squash, tomato puree and spices. Sweat this off for another 5 mins then add the Marmite, butter beans and tomatoes. Add around 250 ml of water.

Step 2. 

Bring to the boil and simmer for around 5 mins. Taste for seasoning then place the lid on and bake in the oven for around 1 hour. Take out of the oven.

Step 3. 

Next make your dumplings. In a small bowl mix the flour and baking powder and sift into a larger bowl. Add a pinch of salt. Using a grater, grate your butter into the flour. Crumb the flour and butter together in your hands until it resembles fine breadcrumbs. Roughly chop your Jalapenos add this to the bowl. Then grate in your cheddar.

Step 4. 

Mix together then add the milk and mix into a soft dough. Using the palm of your hands take some dough and shape into a ball. This mixture should make 12. Place the dumplings on top of the stew. Place the lid back on and bake for 25 mins. Take the lid off and bake for another 5 mins. Take out of the oven and serve! Great with some steamed garlic greens on the side.
