One year passes, another unfurls and just like that, it’s January again. It’s been a beautiful start to the year with sparkling frosts in low, golden sunlight and we’re excited to welcome you back with everything the farm has to offer. Here’s to a year of connection - with our food, with nature and with each other.

Notes from the field

The weather plunged us straight in at the deep end after the Christmas break. With freezing temperatures and thick frost we were battling frozen sprouts and frozen fingers! With five layers, good gloves and lots of harvesting on the agenda, we soon warmed up. The trick to working outdoors in subzero conditions? Don’t stop moving! We have plenty of produce growing on the farm - all the cabbages, leeks, chard, spinach, spring greens and the last of the kales. The salad leaves were so popular leading up to Christmas our stocks are slightly depleted so we’re now waiting for the re-growth. After a restful break, we’re very happy to be back at work and everyone’s excited for the growing year ahead.

We’ve been looking into which tomato varieties we’d like to grow this year and checking we have all the seeds we need when we begin sowing next month. We’ll be direct sowing radishes and salad turnips in early February. The overwintered seedlings in the propagation house are looking good - red Russian kale, spinach and mixed lettuce all patiently waiting to be planted and the first bed of peas went in the ground last week. They’re tucked under some netting, which will hopefully deter the hungry mice! These little green shoots of new life spur us on. When hit with the soggy grey downpours of the last few weeks, they are just the encouragement we need to remind us warmer, lighter days are close, as the cycle begins once more in the fields.

Seasonal focus

Oakwood farm has been supplying us with organic apples and juice for many years now. They have an incredible mix of varieties - in stark contrast with the limited and rather bland options available in supermarkets (often brought from the other side of the world). No doubt everyone has their own take on the apple pie but our January recipe peps up a classic. Our ‘4 Ways With’ proves that apples aren’t just for snacking!

4 Ways With... Our Oakwood Apples

Kick those January blues with a spicy apple slaw, a fruit plate, a warming soup or an apple butter. Our '4 Ways With' feature on the website this month proves that apples aren’t just for snacking!

Oakwood Apple Pie with Cheddar Pastry

Our January recipe peps up a classic with cheddar pastry and utilises some crucial freezer time (and lots of patience) to really get it flakey and flavoursome.
