Aubergines are a great vehicle for strong flavours and for the BBQ! This is our take on a classic recipe with Miso and Honey hitting those sweet and salty taste buds. This is great as a side dish or as a main in it’s own right.

Ingredients

 
2 Medium Aubergines (4-500g) or 3-4 Small Aubergines
1 tbsp Organic Oat Miso
2 tbsp Sussex Bee Hot Honey
1 tsp Sesame Oil
1 tbsp Water
Toasted Sesame seeds
Chopped spring onions

Method


Step 1.

Pre heat your oven to around 220c. Cut your aubergines in half lengthways (or quarters if they're on the larger side), then score the inside with a knife in a criss-cross pattern (this helps the aubergines cook quicker and lets the marinade spread better).

Step 2.

In a small bowl add the Oat Miso, Hot Honey, sesame oil and a little water to slacken the mixture and mix until smooth. It should be fairly thick in consistency.

Step 3.

Brush your Aubergines with a little sesame oil, sprinkle with some salt and place cut side down on the grill of your BBQ. Cook it for around 4-5 minutes until starting to soften. Turn over and then brush with the miso mix. Continue to cook for another 10 minutes or so and then continuously turn and brush with the marinade until they are soft all the way through.

Step 4.

Serve with a scatter of toasted sesame seeds and some chopped spring onions
