

200g Ring of Fire chillies (also works with any green or red chillies you like)
1 tbsp Seaford Sea Salt
3 tbsp Bignose & Beardy Apple Cider Vinegar
1 tbsp Lemon juice
Splash of Honest Toil or any extra virgin olive oil
Step 1:
Slice the chillies thinly and mix with the sea salt, including seeds. Tip into a sterilised jar and refrigerate for 3 days.
Step 2:
On the 3rd day, drain the chillies and blitz them in a food processor. Leave them chunky if you like a chunkier sauce or blitz them more if you like it smooth.
Step 3:
Add the apple cider vinegar and lemon juice and mix well. Tip back into your jar and seal with some extra virgin. It will keep in the fridge for several months.
